Easy Edamame Hummus

Creamy edamame hummus is a healthy and delicious dip to enjoy with veggies, crackers, and pita wedges! 

Ingredients

  • 1 1/2 cups (225 g) frozen shelled edamame (soybeans)
  • 2 tablespoons (30 g) tahini
  • 1/4 cup (60 ml) water
  • 3 tablespoons (45 ml) lemon juice, about 1 lemon
  • 2 teaspoons (10 ml) low-sodium soy sauce
  • 1 clove garlic, grated or mashed
  • 1/4 teaspoon (1 g) salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon ground coriander
  • 3 tablespoons (45 ml) olive oil

Instructions

    1. Boil edamame in salted water for 4-5 minutes, or microwave, covered for 2-3 minutes.
    2. In a food processor, puree the edamame, tahini, water, lemon juice, soy sauce, garlic, salt, cumin, and coriander until smooth. Then drizzle in olive oil, mixing until fully combined.
    3. Transfer to a medium bowl and serve.
