Warm Brown Sugar Cinnamon Baked Oatmeal Cups. These tasty bite-size cups make breakfast-on-the-go wholesome and the perfect snack!

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 3/4 cups milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon brown sugar

Instructions

  1. Preheat oven to 375F and lightly spray a 24 mini muffin pan.
  2. In a medium bowl, combine the rolled oats, baking powder, cinnamon, and salt
  3. Add the milk, eggs, and vanilla extract. Using a fork, whisk to combine. 
  4. Scoop about 1 1/2 tablespoon of the oat mixture into each muffin cup making sure to evenly distribute the liquid and the oats. 
  5. Lightly sprinkle each muffin top with a little brown sugar.
  6. Bake for 22-25 minutes until the tops are light brown and the oat mixture is set.
  7. Serve warm, right out of the oven or at room temperature.
