Adjust the oven rack to the middle oven position and preheat the oven to 350°F. Grease a bread loaf pan or line it with parchment paper for easy lifting.
In a pan, add butter, diced apples, honey, and cinnamon. Cook apples down for 3 minutes until they’re soft.
In a large bowl, whisk the flour, cinnamon, baking powder, and salt together.
Add the egg, melted butter, and honey, and whisk into a batter. Add cooked apples, and fold over to combine.
Pour the apple batter into the prepared pan and cook in the preheated oven for 45 minutes. At this point, make a tent with foil and cook for an additional 10 to 15 minutes until a toothpick comes out clean when inserted in the middle.
Remove from the oven and allow the apple loaf to cool down before slicing.
