Cranberry Quinoa Salad

Fresh, delicious, and packed with nutrition this quinoa salad is one you’ll want to have often! Save time by mixing all the salad ingredients except the spinach ahead of time, and combine with the spinach right before serving.

Ingredients

  • 4 cups finely chopped spinach
  • 2 cups cooked quinoa, cooled
  • 3/4 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/3 cup orange juice
  • 1/3 cup olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, combine spinach, quinoa, cranberries, and chopped pecans.
  2. In a small bowl, whisk orange juice, olive oil, vinegar, and salt.
  3. Drizzle as much dressing into salad bowl as desired, toss to combine.
  4. Optional: add in chopped roasted chicken or turkey.
