Ingredients

  • 4 cups cauliflower rice or regular rice, steamed,
  • 2 1/2 cups reserved Slow Cooker Buffalo Chicken, warmed
  • 1 avocado, peeled, pitted, and diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup crumbled Blue Cheese
  • 1/2 cup Ranch dressing

Instructions

  1. In 4 separate bowls, divided the steamed cauliflower rice. Top with buffalo chicken, avocado, cherry tomatoes, red onion, and blue cheese.
  2. Drizzle each bowl with Ranch dressing and serve.
