Hummus Veggie Club Sandwich

Try this hummus sandwich for a delicious and healthy lunch you can enjoy anywhere! 

Ingredients

  • 3 slices hearty sandwich bread
  • 2 tablespoons hummus, any flavor
  • 1/2 medium tomato, thinly sliced
  • 2 slices Provolone cheese
  • 1 tablespoon basil pesto

Instructions

  1. Place all three slices of bread onto a flat surface and spread 1 tablespoon over 1 slice. Top with half the sliced tomato and 1 slice of cheese. 
  2. On the second slice, spread half the pesto and flip the pesto side onto the open sandwich. Spread the remaining pesto on top the sandwich and top with the remaining tomato slices and cheese. 
  3. Spread the remaining hummus onto the last slice. Assemble the sandwich and enjoy.

Notes

*Making this a triple-decker sandwich is optional. If you’d like to make it with only 2 pieces of bread, spread the hummus and pesto over both slices, and top one with the cheese and tomato. Assemble and enjoy.
