There’s no denying that a good sandwich hits the spot for a quick, portable midday meal. In this post, I’m sharing both recipes and tips to pack low-carb sandwiches in a lunch for a quick, portable midday meal.
Whether you are watching carbs or not, you’re going to love these sandwiches inside homemade cloud bread or your favorite storebought low-carb bread.

Low-Carb Sandwich Bread
Each slice of my low-carb sandwich bread has less than 1 total gram of carbs and only 38 calories per slice. Most storebought low-carb bread has under 2 net carbs per slice. Both are an easy option and super delicious with any sandwich ingredients.
When it comes to low-carb lunches, using no-carb bread is a total game-changer. For these recipes below, I’ve used my homemade cloud bread because it is also gluten-free, and in just a couple of minutes, I can whip up a batch.
How to Pack a Low-Carb Sandwich for Later
Because the rounds of cloud bread are light and spongy, they easily absorb moisture. One tip to keep in mind is to go easy on condiments and wet ingredients, like tomatoes, pickles, etc.

How to Pack a Low Carb Sandwich for an Office Lunch

Yes, there is a way to layer a sandwich, whether low-carb or not, so it won’t get soggy. The key is to keep the wet ingredients like pickles and tomatoes from touching the bread.
Here’s how to properly build a low-carb sandwich:
- Place a large piece of lettuce onto one slice of bread.
- Layer with tomato or other wet ingredients and finish with the sliced deli meat.
- Place the cheese or an additional piece of lettuce over the deli meat and assemble the sandwich.
- Pack in a lunch container with a compartment that fits the sandwich, these are perfect. The close fit keeps the sandwich from moving around and unassembling in the lunchbox.
The lettuce and cheese act as barriers against moisture, so the bread stays dry, and your sandwich stays intact in the lunchbox and mid-bite.
*If you are using cloud bread, keep in mind that condiments like mustard and mayonnaise can quickly make the bread soggy so either keep them light or pack them on a small lidded container and spread them later before eating.

Ingredients
- 1 tablespoon mayonnaise
- 4 slices of cloud bread
- 4 strips cooked bacon
- ½ avocado peeled and sliced
- 4 slices deli turkey
- 1 tomato sliced
- 2-4 leaves lettuce
Instructions
- Spread mayonnaise onto both sides of the bread. Place the lettuce onto 2 slices of cloud bread and top with tomato, bacon, avocado, and sliced turkey. Top with additional lettuce and assemble the sandwich.
