Low Carb Zucchini Pizza Bites

Pizza that’s good for you! No joke, these Low Carb Zucchini Pizza Bites are the ultimate way to eat pizza and they’re ready in 10min!


  • 1 large zucchini, sliced diagonally into 1/4-inch thick rounds
  • 1/4 cup marinara sauce
  • 1/2 cup shredded Mozzarella cheese
  • 1/4 cup mini pepperonis
  • 2 tablespoons sliced black olives


  1. Preheat the oven to broil. Line a large baking sheet with parchment paper.
  2. Place the zucchini slices onto the lined baking sheet in an even layer.
  3. Spread the marinara sauce over the top of each slice. Top with cheese, pepperoni, and black olives.
  4. Broil for 2 to 3 minutes or until the cheese is melted.



If your oven does not have a Broil setting, preheat the oven to 350F with the rack in the middle and bake the zucchini pizzas for 7-8 minutes until the cheese has melted and the zucchini is softer.
