Pumpkin Baked Oatmeal

Try this delicious pumpkin baked oatmeal for a cozy start to your day made with pumpkin, oats, maple syrup, pumpkin spice. 

Ingredients

  • 2 cups old fashioned oats
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 ½ teaspoons pumpkin spice
  • 1 cup canned pumpkin
  • 1 egg
  • ¼ cup maple syrup, more for drizzle
  • 1 ½ cups milk
  • Pecans, finely chopped, for topping

Instructions

  1. Preheat the oven to 375F and grease a 9 x 9-inch square baking dish.
  2. In a medium mixing bowl, combine oats, baking powder, salt, and pumpkin spice.
  3. In a large bowl, combine pumpkin, egg, maple syrup, and milk. Add oat mixture into the large bowl and mix all ingredients to form a thick oat batter. 
  4. Pour batter into the baking dish. 
  5. Bake 35 minutes in the preheated oven until the top is golden and the oat mixture is set. Remove from oven and allow the mixture to cool slightly before serving.
  6. Spoon baked pumpkin oats into bowls, drizzle with additional maple syrup and chopped pecan pieces for topping.
