Roasted Apples with Cinnamon

sliced apples on a baking sheet

These cinnamon roasted apples taste like the inside of an apple pie, without the hard work!

  • 4 large Granny Smith apples, cored and sliced
  • 2 tablespoons light brown sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 2 tablespoons butter, melted
  • 1/2 vanilla bean pod or 1 1/2 teaspoons vanilla extract
  • 1/2 cup chopped pecans, optional
  • Vanilla ice cream, for serving

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2.  In a large bowl, combine the brown sugar, with the cornstarch and cinnamon. Add the butter, vanilla, and stir to combine.
  3.  To the mixture, add the sliced apples, and toss to combine the apples thoroughly coated with the sugary mixture.
  4.  Spread the apple mixture on the parchment-lined baking sheet. Bake until tender, for about 25-30 minutes.
  5.  Remove from the oven and serve over vanilla ice cream and top with chopped pecans.
