Roasted Cherry Tomatoes

You’re in for a delicious surprise thanks to these roasted cherry tomatoes. It’s so easy to make and goes fantastic with pasta, fish, chicken- you name it!

  • 2 pints of cherry tomatoes
  • 1 small red onion, thinly sliced
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning

Instructions

  1. Position your oven rack in the middle of the oven and preheat to 400F. Line a baking sheet with parchment paper or grease a baking sheet with olive oil.
  2. In a large bowl, combine olive oil, garlic, and Italian seasoning. Place cherry tomatoes and sliced onions in the bowl and toss to combine and season all ingredients well. Transfer them onto the lined sheet pan.
  3. Bake for 20 to 25 minutes, depending on how roasted you like. Make sure to give them a good toss around minute 15.
  4. Once ready, remove from the oven and serve.
