Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon yellow curry powder
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound cauliflower florets, chopped into even-sized pieces

Instructions

  1. Preheat the oven to 400F (200C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine olive oil, curry powder, lemon juice, salt, and pepper.
  3. Add the cauliflower florets to the bowl and toss to coat with the seasoning.
  4. Spread curry-seasoned florets onto the parchment paper-lined pan and bake, in the preheated oven, for about 25 minutes, until the cauliflower tops are golden and the cauliflower is tender when poked with a fork.
  5. Remove from the oven and serve.
