Perfectly Roasted Red Cabbage

Roasted red cabbage makes is simple to prepare and yields delicious bits of savory and tender cabbage with crisped edges


  • 1 head red cabbage, sliced into 1/2-inch thick cubes or slices
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon roasted veggie seasoning


  1. Preheat oven to 400F and line a large baking sheet with foil or parchment paper. 
  2. Add the cabbage to the baking sheet and drizzle with olive oil. Season with salt and seasonings. Toss to combine and spread the cabbage out in an even layer onto the baking sheet. 
  3. Bake for 25 minutes or until the cabbage is tender through the center and the edges are lightly browned. 
  4. Remove from the oven and serve.
