Three Ingredient Healthy Fudgy Brownies

  • 8-ounce bag Sunsweet prunes, about 2 packed cups
  • 1 cup smooth nut butter, or nut-free alternative
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons liquid stevia, optional*

  1. Preheat oven to 350F and lightly grease or spray a mini muffin pan.
  2. In a food processor, add prunes, nut butter, and cocoa powder and puree until smooth.
  3. With a cookie scooper, fill each mini muffin cavity with brownie mixture.
  4. Bake for 18 minutes, or until a toothpick comes out clean. Allow brownie bites to cool down completely prior to serving.

Some cocoa powders (organic, raw) might have a bitter taste without any sweetener and almond butter isn’t as sweet as peanut butter. I suggest you taste your batter prior to baking to check if stevia might need to be added or adjusted.
