Easy Turkey and Rice Soup

Made with roasted turkey, veggies, and rice simmered in a seasoned broth, this turkey and rice soup is a healthy and comforting meal. 

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, chopped
  • 1/2 cup chopped celery
  • 1/2 teaspoon dried thyme or poultry seasoning
  • 1 bay leaf
  • 2 32-ounce containers chicken stock
  • 1 cup of water
  • 1 cup white rice
  • 2 cups shredded cooked turkey
  • salt & pepper to taste

Instructions

  1. In a large soup pot, heat the oil over medium-high heat. Add the onion, garlic, carrots, celery, thyme, and bay leaf. Cook and stir until the veggies are soft, about 5 minutes. 
  2. Add the chicken stock and water. Bring to a boil. Add the rice and turkey meat, stir and cook over medium-low heat until the rice is tender about 25 to 30 minutes.
