Preheat the oven to 350F. Grease a loaf pan or line it with parchment paper.
Make the batter:
In a large bowl, mash the bananas. Add the cottage cheese, melted butter, and eggs. Whisk to combine. Add the sugar and vanilla and mix.
In a smaller bowl, mix the flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients' bowl and mix until just combined. Pour the batter into the prepared loaf pan.
Bake:
Bake in the preheated oven for 55 minutes until a toothpick inserted in the center comes out clean. Around minute 45, cover it with tin foil and finish baking.
Remove it from the oven and allow it to cool down for 15 minutes before removing it from the pan and slicing.

This banana bread is one you'll devour fast! That said, store any leftovers in an airtight container or tightly wrapped in plastic for 3 to 5 days on the countertop or in the fridge.
