In a medium bowl, whisk the eggs until the yolks and egg whites have fully mixed.
Heat a non-stick pan over medium heat. Once hot, grease it with oil, butter, or spray. Immediately pour the beaten eggs into the pan and let them cook, undisturbed, for 1 to 2 minutes. When the edges of the egg begin to look cooked, and the bottom has begun to set.
Add the cottage cheese on top of the eggs in the pan, season with salt and pepper. Use a silicone spatula to break up the eggs and gently scramble them together, letting the mixture sit between scrambles for about 1 minute. Cook until the eggs are set to your liking, for an additional 3 to 4 minutes.
Serve the scrambled eggs with fruit, toast, or your favorite breakfast sides.
