Preheat the oven to 425F and line a baking sheet with parchment paper.
Wash, peel (optional), and cut the potatoes into ¼-inch strips. Toss them in a clean kitchen towel to dry them well and transfer them inside a large mixing bowl.
Season:
Drizzle the potatoes with olive oil, add the garlic, and ¼ teaspoon salt. Toss until the fries are evenly coated.
Transfer the fries onto the lined baking sheet and spread them apart. Save the bowl with the oil.
Bake:
Bake for 30 minutes, flipping the fries over halfway through.
Make them cheesy:
Remove the fries from the oven and with tongs, return them to the olive oil greased bowl. Sprinkle the fries with parmesan cheese and parsley, toss to coat, and transfer them back onto the baking sheet.
Place the fries back in the oven and continue baking for 7 to 10 minutes, until the cheese is melted and the tops are golden.
Enjoy!
Remove them from the oven, sprinkle ¼ teaspoon salt over the fries, and serve with your favorite condiments.
