These cinnamon roasted apple slices are full of flavor and can be enjoyed alone, over pancakes, with ice cream or topped with whipped cream.

large Granny Smith apples

vanilla bean pod or 1 ½ teaspoons vanilla extract

Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a large bowl, combine the brown sugar, with the cornstarch and cinnamon. Add the butter, vanilla, and stir to combine.
To the mixture, add the sliced apples, and toss to combine the apples thoroughly coated with the sugary mixture.
Spread the apple mixture on the parchment-lined baking sheet. Bake until tender, for about 25-30 minutes.
Remove from the oven and serve over vanilla ice cream and top with chopped pecans.
