Heat a large skillet over medium-high heat. Once hot, add the oil and distribute it around the pan. Add the onions and sauté for about 5 minutes until they're soft, golden and translucent.
Add chicken pieces and continue to cook, stirring frequently, for another 5 to 7 minutes until the chicken is fully cooked and the internal temperature reads 165F.
Add the Buffalo sauce and stir to coat the chicken. Reduce heat to low, and simmer the sauce for 3 more minutes, stirring from time to time.
Assemble the wraps:
Layer two lettuce leaves on top of each other to build a base for each lettuce wrap. Scoop some of the Buffalo chicken mixture on top of the lettuce, add blue cheese crumbles and avocado slices on top, and drizzle with Ranch.
Notes
Turn this chicken into a slow cooker buffalo chicken by placing the chicken, onions, and sauce in a slow cooker. Cook on high for 5 to 6 hours or 8 on low. Follow the recipe to assemble.
