The perfect salad for when creole tomatoes are in season! Paired with a simple dressing the sweet ripe, juicy flavors of the tomatoes will shine through!

ripe creole tomatoes
,
sliced ¼" thick

small vidalia onion or a sweet onion
,
thinly sliced

teaspoon
salt

sprigs
fresh tyme or lemon tyme

red wine vinaigrette
Instructions
Prepare the salad dressing:
Click on the red wine vinaigrette link and prepare the salad dressing.
Refrigerate for up to a week.
Make the Creole tomato salad:
Arrange the tomato slices on a platter. Separate the thin onion slices over the tomatoes and lightly sprinkle with salt.
Remove some of the thyme leaves from the sprigs and sprinkle over the salad. Drizzle it with the red wine vinaigrette and serve at room temperature.
