Instructions
Prep:
Cook the bacon in the microwave or in a pan until crispy. Pat it dry with a paper towel to absorb excess fat and chop it into small pieces.
Cook the egg to your liking.
Assemble:
When the egg is ready to go, add the cottage cheese to a bowl. Top it with the sliced cucumbers, cherry tomatoes, and egg.
Sprinkle the bacon over the top and season with salt and pepper.
