On days when I need extra protein and I’m craving that savory egg and bacon combo, this cottage cheese breakfast bowl hits the spot. 

I add fresh veggies, like cherry tomatoes and cucumber slices, and lo and behold, this is one savory cottage cheese bowl that keeps me coming back for more. 

Benefits of This Breakfast Bowl 

The classic egg and bacon combo combined with cottage cheese makes this breakfast high in protein, with 35 grams of protein per serving! That means it helps you feel full longer and avoid unhealthy snacking. By adding cucumber and tomato, you also get fiber, antioxidants, minerals, and vitamins. Yay!

  • Cottage cheese: makes this breakfast creamy and high in protein.

  • Cherry tomatoes: or your favorite tomatoes, in slices.
  • Egg: some days, I cook the egg over easy; others, soft-boiled or even hard-boiled work!
  • Bacon: cooked to crispy perfection makes this breakfast delish!
  • Salt and pepper: just a pinch for seasoning.

How to Make a Cottage Cheese Breakfast Bowl

Cook bacon and eggs as you do for other breakfasts, and this cottage cheese bowl is almost ready! Check out the easy steps:

  1. Cook the bacon
    First, cook the bacon until crispy in the microwave or a pan. Use a paper towel to absorb excess fat and chop it.
  2. Cook the egg
    Over easy, soft-boiled, or hard-boiled. You choose!
  3. Assemble
    Add cottage cheese to a bowl. Top it with cucumber, tomatoes, and the cooked egg. Sprinkle the bacon on top and season with salt and pepper. Enjoy!

Ingredients

  • 1 cup cottage cheese
  • ½ cucumber, sliced
  • ⅓ cup cherry tomatoes, sliced
  • 1 egg, over easy, soft-boiled, or hard-boiled
  • 1 strip bacon, cooked crispy
  • Pinch of salt and pepper

Instructions

Prep:

  • Cook the bacon in the microwave or in a pan until crispy. Pat it dry with a paper towel to absorb excess fat and chop it into small pieces.
  • Cook the egg to your liking.

Assemble:

  • When the egg is ready to go, add the cottage cheese to a bowl. Top it with the sliced cucumbers, cherry tomatoes, and egg.
  • Sprinkle the bacon over the top and season with salt and pepper.
