I love adding soft-cooked eggs to my savory cottage cheese bowl because it adds a delicious flavor from the yolk and a velvety texture that’s second to none –you could also poach or fry it over easy. 

You can swap the veggies, repurpose leftovers, or add extra toppings to make it healthier. With simple recipes like this one, the sky is the limit!

  • Egg: some days, I have time to soft-boil the egg; others, when I’m rushed, I cook the egg over easy in a pan or use a hard-boiled egg that’s ready to go in the fridge.
  • Roma tomato: or any other tomato you have around.
  • Bell pepper: any color; use your favorite!
  • Cucumber: add more flavor and freshness.
  • Salt: just a pinch for seasoning.

How to Make a Savory Cottage Cheese Bowl 

The egg is the only cooked ingredient in this bowl, so it’s an easy meal that you can assemble super fast! Check out the simple steps:

  1. Combine
    Add cottage cheese, tomatoes, bell peppers, and cucumbers to a bowl.
  2. Cook the egg
    Cook the egg to your liking: soft-boiled, over-easy, poached, or hard-boiled. Place it over the other ingredients.

  • 1 cup cottage cheese
  • 1 egg, soft-boiled or over easy
  • 1 roma tomato, sliced thin
  • ½ bell pepper, diced
  • ¼ cucumber, sliced
  • Pinch of salt

Instructions

  • Add the cottage cheese in a bowl. Top with the sliced tomatoes, bell peppers, and cucumbers.
  • Cook the egg to your liking, either soft-boiled or cooked in a pan over easy. The goal is that velvety egg yolk action. Place it over the cottage cheese.
