Preheat oven to 350F and grease a 9-inch round pie dish. For easier transport in and out of the oven, place the dish on top of a baking sheet.
Place the eggs, cottage cheese, salt, and pepper in the blender and blend until smooth. Pour the mixture into a medium bowl.
Add the ham, shredded cheese, and green onions (if using) to the bowl and mix well. Pour this into the prepared dish.
Bake:
Transfer the egg mixture to the preheated oven and bake it for 30 to 35 minutes, until the middle is set (no longer wet) and looks puffy. Remove it from the oven and let it sit for 5 minutes before slicing and serving.
Store:
Allow the quiche to cool down to room temperature before refrigerating leftovers, covered with plastic wrap, for up to 3 days. Slice, reheat in the microwave for 30 seconds to 1 minute to enjoy.

Want to add mix-ins? A 6-egg mixture with 1 cup of cottage cheese in a 9-inch pie dish can accommodate up to 1 to 1 ½ cups of mix-ins before it becomes too full. Swap ingredients and add diced tomatoes, sautéed onions, sautéed mushrooms, various cheeses, chopped spinach, etc.
