Crustless Quiche with Cottage Cheese
I'm a big fan of crustless quiches because they simplify mornings. Instead of scrambling eggs with cottage cheese while juggling everything else, I bake this ahead while cleaning up from dinner. Then it goes straight into the fridge and becomes a protein-packed breakfast I can quickly reheat and enjoy.
There's no crust to worry about, which makes it lighter and easier to prep. The cottage cheese melts right in, giving it a creamy texture and a boost of protein. It's a simple, customizable recipe that even my family happily eats.
Ingredients
Four protein-rich ingredients make this cottage cheese crustless quiche super nutritious and satisfying:
- Eggs: give the quiche structure and fluffiness.
- Cottage cheese: for an easy boost of protein!
- Ham/bacon: use your favorite for a tasty flavor.
- Shredded cheese: Cheddar or any other shredded cheese.
How to Make Cottage Cheese Quiche
First, you blend the cottage cheese with the eggs in the blender. Combine this liquid mix with ham/bacon and cheese in a bowl. Bake in a greased pie dish for 30 to 35 minutes at 350F. Allow it to cool down and enjoy immediately or store for later!
Variations
For this quiche that calls for 6 eggs and 1 cup of cottage cheese, you can add 1 to 1 ½ cups of mix-ins. Here are some tasty ideas:

- Sautéed onions
- Sautéed mushrooms

- Cooked breakfast sausage

Cottage Cheese Crustless Quiche

Ingredients
- 6 large eggs
- 1 cup cottage cheese
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ cup diced ham or bacon crumbles
- ½ cup shredded cheddar cheese
- 2 tablespoons chopped green onions, optional
Instructions
Prep:
- Preheat oven to 350F and grease a 9-inch round pie dish. For easier transport in and out of the oven, place the dish on top of a baking sheet.
- Place the eggs, cottage cheese, salt, and pepper in the blender and blend until smooth. Pour the mixture into a medium bowl.
- Add the ham, shredded cheese, and green onions (if using) to the bowl and mix well. Pour this into the prepared dish.
Bake:
- Transfer the egg mixture to the preheated oven and bake it for 30 to 35 minutes, until the middle is set (no longer wet) and looks puffy. Remove it from the oven and let it sit for 5 minutes before slicing and serving.
Store:
- Allow the quiche to cool down to room temperature before refrigerating leftovers, covered with plastic wrap, for up to 3 days. Slice, reheat in the microwave for 30 seconds to 1 minute to enjoy.
Notes
- Want to add mix-ins? A 6-egg mixture with 1 cup of cottage cheese in a 9-inch pie dish can accommodate up to 1 to 1 ½ cups of mix-ins before it becomes too full. Swap ingredients and add diced tomatoes, sautéed onions, sautéed mushrooms, various cheeses, chopped spinach, etc.

Super easy! My family doesn’t eat cottage cheese, but they did today and lover it (Didn’t tell them) Great protein source and tasty! I added bell peppers, mushrooms and artichoke hearts and topped with a cooked piece of bacon!

First time making this recipe. Confusion with the Notes section that states you can add 1-1/12 cups of mix-ins… And to “swap” ingredients.. No. I used ALL base ingredients PLUS 10 oz of drained spinach and a sautéed diced small onion. I.e. base ingredients PLUS 1 cup and there was still room in the 9 inch pie plate for more. I cooked for full 35 minutes and let cool. This turned out excellent! And again, there are so many variations to be had. I.e. I used pepper jack cheese, added some extra red pepper seeds for zap. I also added some crushed garlic. Stick to core ratios, pie plate, bake temp & have fun!

Could this be made in an 8×8 baking dish instead?

Absolutely! You might need to adjust the baking time (+2 minutes). Just keep an eye for the puffy centers.
