fresh carrots

oil

coconut, olive oil, your choice

kosher salt
Instructions
Prep:
Preheat the oven to 425F and line a baking sheet with parchment paper.
Peel the carrots and slice them into thick strips.
Season:
Place the carrot strips onto the baking sheet and drizzle with the oil, sprinkle with the salt. Toss to combine.
Bake:
Place the baking sheet into the preheated oven and bake at 425F for 20 minutes, or until the carrots are fork tender and crispy on the outside.
Notes
You can also use baby carrots, sliced in half lengthwise, instead.
