Cut the watermelon into cubes and add them to a blender. Add the lime juice and blend until smooth. Taste the mixture and add sugar or honey, if needed. Blend again to mix.
Pour the mixture into popsicle molds, leaving about ½ inch at the top. They expand as they freeze. Insert the popsicle sticks and secure them with the lid.
Freeze:
Freeze for 4 hours, or until solid. To release, run the outside of the popsicle mold under warm water for a few seconds, then gently pull the popsicles out.
Notes
Seedless watermelon is easiest for popsicles, but if you can’t find one, removing the seeds after cutting is not too bad. A few blended seeds won’t be noticeable.
Taste the watermelon mixture before adding sweetener. If the watermelon is sweet, you may not need any sugar or honey.
There’s usually no need to strain the mixture. Fresh watermelon blends smooth enough for popsicles.
Once frozen solid, they'll last up to 3 months in the freezer -although I recommend enjoying them much sooner. They can stay in the mold, or you can remove them and store them in a freezer bag or airtight container for up to 3 months.
