Fresh Watermelon Popsicle Recipe
With this easy popsicle recipe, you can enjoy juicy watermelon and beat the summer heat. Just like my watermelon pizzas, this pops will put that enormous watermelon you brought to use and bring variety to snack time, just like the recipes in my cookbook The Best Homemade Snacks on the Planet.
Ingredients
For this popsicle recipe, select a whole watermelon and cube it yourself, or buy a container of prepped watermelon; you'll need a pound (about 5 cups). Add fresh lime juice, and, optionally, use sugar or honey to make the pops sweeter.
Choosing the Right Watermelon
You'll want to look for a watermelon with dark green skin and a yellow spot on one side. The darker the yellow, the more flavor inside. Be sure to give the underbelly (the location of the yellow spot) a thump; if you hear a hollow sound, it's a good one!
How to Make Fresh Watermelon Popsicles
- Prep the watermelon.
Rinse and cut the watermelon into small cubes. - Blend.
You can use a blender or food processor to liquefy the fresh watermelon, then mix it with sugar or honey and fresh lime juice. - Freeze the popsicles.
Pour the mixture into a popsicle mold and freeze.

Easy Watermelon Popsicles

Ingredients
- 1 pound watermelon or 3 cups diced
- 2 tablespoons sugar or honey, optional
- 2 tablespoons lime juice
Instructions
- Cut the watermelon into small pieces and put them in a blender with the sugar and lime juice. Process until smooth, adding enough water if needed to make it smooth.
- Pour into popsicle molds and freeze for 4 hours ot until frozen.
