Watermelon Popsicles

Homemade watermelon popsicles are made with real ingredients for a healthy and refreshing treat to enjoy on hot summer days.

The recipe uses real fruit and no added sugar and it’s perfect for when you’ve bought a huge watermelon and want to turn everyone’s favorite summer fruit into something the kids will ask to make again and again.

Fresh Watermelon Popsicles

Fresh watermelon popsicles are made by blending real watermelon into liquid form and freezing it in a popsicle mold.

It’s a great way to enjoy juicy watermelon and beat the summer heat. Just like my watermelon pizzas, this recipe will put that enormous watermelon you brought to use and bring variety to snack time.

Ingredients

You’ll need these three ingredients to make homemade watermelon popsicles:

  • fresh watermelon: select a whole watermelon and cube it yourself or buy a container of prepped watermelon, you’ll need a pound, about 5 cups.
  • sugar or honey: totally optional and makes these pops sweeter!
  • fresh lime juice: brings out the watermelon flavor and gives each bite a sweet-tart flavor.

How to Make Fresh Watermelon Popsicles

Before we freeze, we need to liquefy the fresh watermelon. You can do this in a blender or food processor, here’s how:

  1. Prep
    Cut the watermelon into small cubes.
  2. Blend
    Add the watermelon, sugar or honey, and fresh lime juice to a high-speed blender and blend until smooth.
  3. Freeze
    Pour the mixture into a popsicle mold and freeze.

Prior to slicing, I recommend rinsing the whole watermelon (with the rind on) with soap and warm water. You never know where it’s been and once your knife makes contact with the rind, any dust or bacteria can easily carry into the melon.

Choosing the Right Watermelon

To choose the perfect watermelon, you’ll want to look for a watermelon with dark green skin and a yellow spot on one side. The darker the yellow the more flavor inside.

Be sure to give the underbelly (the location of the yellow spot) a thump; if you hear a hollow sound, it’s a good one!

Ingredients

  • 1 pound watermelon or 3 cups diced
  • 2 tablespoons sugar or honey, optional
  • 2 tablespoons lime juice

Instructions

  • Cut the watermelon into small pieces and put them in a blender with the sugar and lime juice. Process until smooth, adding enough water if needed to make it smooth.
  • Pour into popsicle molds and freeze.
