If using a pancake mix, you can use a large bowl or batter shaker bottle, to combine the mix and water. If your pancake mix calls for eggs, butter, and milk, I recommend using a bowl so you can combine the ingredients well.
Make the pancakes:
Place the silicone pancake molds on a plate. Spraying the molds makes it easier to lift and release the pancakes. Fill each circle with batter halfway, with no more than ⅓ cup inside each.
Microwave for 60 to 90 seconds, depending on the microwave strength. The tops should be fully cooked. If not, add cooking time in 15-second increments until they're nice and fluffy.
Remove the plate with the silicone mold onto the counter and flip it over while folding them over to release the pancakes from the mold.
Serve:
Serve the pancakes with your favorite toppings and syrup.
Storage:
Leftover pancakes or batter can be kept in the fridge for up to 3 days. Reheating the pancakes is not recommended because the texture changes -they get chewy. It's best to make extra batter and cook it as needed.
Notes
You can cook the pancake batter in a microwave-safe bowl. Spray it, pour the batter, cook, and remove the pancake from the bowl or dish. Repeat as needed.Whip up a quick homemade pancake batter for one by mixing ½ cup flour, 2 teaspoons sugar, ½ teaspoon baking powder, and a pinch of salt. Then, add ½ cup whole milk, 1 tablespoon melted butter, and a splash of vanilla extract. Mix well to combine and you've got pancake batter.
