In a large bowl, combine the spinach, turkey, Italian seasoning, garlic powder, and salt until blended.
Divide the mixture into 4 parts and shape it into patties. Gently press down the center of each patty to create a slight depression so the burger will cook evenly.
Cook:
Preheat the grill to medium-high, or place a large skillet over medium-high heat. Cook for about 4 minutes per side or until the internal temperature reaches 165F.
Serve:
Serve over large lettuce leaves. Top each burger with sliced tomato and 1 tablespoon of Sun-Dried Tomato Pesto and your favorite burger toppings.
