3ouncesbaby spinach (about ½ of a 5oz bag)*, chopped
1 ¼cupsricotta cheese
½cupgrated Parmesan cheese, more for serving
1teaspoongarlic powder
1teaspoononion powder
1teaspoondried oregano or Italian seasoning
½cupshredded mozzarella cheese
Instructions
Boil the pasta:
Fill a large pot with water and bring it to a boil. Cook the lasagna noodles according to the package directions. Drain the water and place the noodles in a colander for a few minutes.
Warm up the sauce:
Pour the marinara sauce and the spinach into the pot. Heat over medium heat, until the sauce is warm and the spinach begins to wilt. Add the lasagna noodles once warm, stir to combine and turn off the heat.
Combine the cheesy filling:
In a medium, microwave-safe bowl, use a fork to combine the ricotta, Parmesan cheese, garlic powder, onion powder, and dried oregano or Italian seasoning. Warm it in the microwave for approximately 2 minutes, stopping after a minute to stir the mixture.
Assemble the lasagna bowls:
Divide the lasagna noodles into 4 bowls, leaving some of the warm marinara sauce in the pot. Top each bowl with ¼ of the cheesy mixture, and spoon the sauce left in the pot over each of the bowls, on top of the cheesy mixture. Sprinkle the shredded mozzarella on top of the bowls, and additional parmesan cheese if desired.
Notes
You can leave the spinach to the side or omit it altogether.
