No Bake Lasagna

A lasagna recipe you don't need to bake and it's so easy that even the kids can make it? Yes, that's correct, so let’s cook!

Quick Lasagna Without the Oven

I typically make this No-Bake Lasagna recipe on nights when I'm rushing home from kid's activities and I need to make dinner in 30 minutes. No matter how hectic the evening, this recipe will come to your rescue too!

This recipe has all the elements of lasagna, minus the meat, which also saves time. For another quick lasagna without the oven that includes meat, use this skillet lasagna recipe.

Ingredients

For this recipe, I use lasagna noodles broken in half so they fit in the pasta bowls easier. Then, you’ll need spinach, marinara sauce (or tomato sauce), and a variety of delicious cheeses: ricotta, Parmesan, and mozzarella.

How to Cook Lasagna Without Baking

The easiest way to make lasagna without baking is to cook the noodles in a pot, warm the tomato sauce, and make the cheesy mixture. Then, you assemble the layers directly inside your serving bowl, and this epic dinner is ready!

    How to Store Lasagna Leftovers

    Leftovers rarely exist now that I have teenagers but when my kids were little, I’d send lasagna in a thermos container to school. The great news is that no-bake lasagna leftovers can stay in the fridge for up to 3 days, so you don’t have to eat them the very next day.

    Watch how it’s made:

    Ingredients

    • 8 lasagna noodles, broken in half
    • 2 cups marinara sauce
    • 3 ounces baby spinach (about ½ of a 5oz bag)*, chopped
    • 1 ¼ cups ricotta cheese
    • ½ cup grated Parmesan cheese, more for serving
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon dried oregano or Italian seasoning
    • ½ cup shredded mozzarella cheese

    Instructions

    Boil the pasta:

    • Fill a large pot with water and bring it to a boil. Cook the lasagna noodles according to the package directions. Drain the water and place the noodles in a colander for a few minutes.

    Warm up the sauce:

    • Pour the marinara sauce and the spinach into the pot. Heat over medium heat, until the sauce is warm and the spinach begins to wilt. Add the lasagna noodles once warm, stir to combine and turn off the heat.

    Combine the cheesy filling:

    • In a medium, microwave-safe bowl, use a fork to combine the ricotta, Parmesan cheese, garlic powder, onion powder, and dried oregano or Italian seasoning. Warm it in the microwave for approximately 2 minutes, stopping after a minute to stir the mixture.

    Assemble the lasagna bowls:

    • Divide the lasagna noodles into 4 bowls, leaving some of the warm marinara sauce in the pot. Top each bowl with ¼ of the cheesy mixture, and spoon the sauce left in the pot over each of the bowls, on top of the cheesy mixture. Sprinkle the shredded mozzarella on top of the bowls, and additional parmesan cheese if desired.

    Notes

    • You can leave the spinach to the side or omit it altogether.
