Preheat the oven to 450F with the top rack in the middle of the oven. Line a baking sheet with parchment or foil.
Quarter the cabbage by slicing it in half, putting the flat side down on the counter, and then slicing it into quarters -first through the middle, then quarter on one side then the other.
Place the cabbage quarters on the lined baking sheet. Drizzle with olive oil and season with garlic, salt, and pepper. I sometimes like to sprinkle some chili flakes for heat.
Roast:
Roast the cabbage in the preheated oven for 15 minutes. Remove the tray from the oven, flip the cabbage over, and continue roasting for an additional 15 minutes.
Serve:
Serve the roasted cabbage hot, and squeeze a little lemon over the top.
