The easiest way to turn veggies into a mouthwatering side dish? Roast them in the oven! That’s what I do with these roasted cabbage quarters to make them tender and caramelized. Just as good as baked cabbage pieces, but with no chopping. Woohoo!

Seasoning Options for Roasted Cabbage
I love the flavor profile that garlic powder brings to roasted cabbage quarters. Feel free to omit it and stick to the salt, pepper, and olive oil combo. Try dried thyme or Italian seasoning; both pair great with cabbage.
Sometimes, I add chili flakes, Cajun seasoning, or a little cayenne pepper for extra heat! I experiment with these flavors on my roasted cabbage steaks as well. They’re just so good!

How to Roast Cabbage in the Oven
It takes just 5 minutes to prepare this vegetable, and then the oven does its magic! Check out what you have to do to turn cabbage quarters into a delicious roasted side dish:
- Prep the oven
Place the top rack in the middle of the oven. While the oven preheats, line a baking sheet. - Prep the cabbage
Cut the half cabbage head in quarters, placing the flat side over the counters so it doesn’t move. - Season
Place the cabbage quarters over the baking sheet. Drizzle with oil and season with salt, pepper, and garlic powder. You can also add some chili flakes for heat. - Roast
After 15 minutes in the oven, flip the cabbage, and keep roasting it for another 15 minutes. - Serve
Squeeze some lemon juice on top and enjoy these roasted cabbage quarters with your favorite protein or additional vegetables.
How Long to Roast Cabbage
With the oven at 450F, it takes about 30 minutes to roast the cabbage quarters, flipping them halfway through for even cooking.

Keep the cabbage’s core intact
The cabbage’s core keeps the quarters from falling apart and it’s delicious, so do not remove it.
Cut the cabbage into even quarters
Quarters of similar size ensure they roast evenly in the oven.
Line the baking sheet
Lining a baking sheet with parchment paper or foil makes clean-up a breeze!
Flip the quarters
Flipping the cabbage quarters halfway through ensures golden and caramelized wedges on both sides.

Ingredients
- ½ head of cabbage, quartered
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- Ground pepper
- Lemon, optional for serving
Instructions
Prep:
- Preheat the oven to 450F with the top rack in the middle of the oven. Line a baking sheet with parchment or foil.
- Quarter the cabbage by slicing it in half, putting the flat side down on the counter, and then slicing it into quarters -first through the middle, then quarter on one side then the other.
- Place the cabbage quarters on the lined baking sheet. Drizzle with olive oil and season with garlic, salt, and pepper. I sometimes like to sprinkle some chili flakes for heat.
Roast:
- Roast the cabbage in the preheated oven for 15 minutes. Remove the tray from the oven, flip the cabbage over, and continue roasting for an additional 15 minutes.
Serve:
- Serve the roasted cabbage hot, and squeeze a little lemon over the top.
