A simple recipe for roasted cabbage steaks that yields a caramelized and oh.so.delicious veggie.

Baked Cabbage Steaks 

Roasting veggies in the oven is my favorite way to turn bland vegetables into delicious sides that even the kids enjoy eating. If you have never made roasted cabbage steaks, you’re in for a treat!

From roasted cabbage quarters to baked cabbage pieces, this veggie is completely different when it goes from raw to roasted. I do love the crunchiness of coleslaw, but this is another story. Caramelized and tender roasted cabbage steaks are out of this world!

It’s a perfect side for any protein or pasta dish, and my favorite part is that it takes barely any time or effort to prepare. That’s what the oven is for: the hard work!

Ingredients

I prefer green cabbage because it's a little more tender than red cabbage, but both work for this recipe. Then, grab simple seasonings, and you’ll turn a simple veggie into roasted cabbage steaks that taste like a million bucks!

Keeping Cabbage Steaks from Falling Apart

To keep the cabbage steaks from falling apart, cut the cabbage head into thick slices of at least ½-inch. While you’ll trim the stump, leaving the cabbage core will also help hold the leaves together.

How to Make Roasted Cabbage Steaks

Prep the cabbage in 5 minutes and then let the oven work for you; that’s how effortlessly this recipe is! Here is the step-by-step to make epic roasted cabbage steaks:

  1. Prep the cabbage
    Lay the cabbage on its side and trim the stump. Then, slice it into steaks.
  2. Season
    Place the cabbage steaks in a lined baking sheet, drizzle with oil, and sprinkle with seasonings.
  3. Roast
    Now, you let the oven bake the rounds for 40-45 minutes. You don’t need to flip them.
  4. Serve
    Squeeze some lemon on top of the roasted cabbage steaks and enjoy!

How Long to Cook Cabbage Steaks in the Oven

With the oven preheated to 450F, cabbage steaks take 40 to 45 minutes to be tender and golden with the edges slightly brown. There’s no need to flip them halfway through!

Seasonings for Cabbage Steaks

In today’s recipe, I’m using salt, pepper, and garlic powder, and sometimes, I like to add some chili flakes for a little heat. You can also season roasted cabbage steaks with Italian seasoning, taco seasoning, dried thyme, or onion powder.

Serving Recommendations 

These roasted cabbage steaks are a delicious side that pairs amazingly well with many different meals! It’s a terrific side for garlic Parmesan spaghetti squash and cottage cheese Alfredo pasta.

If you prefer a protein, I recommend serving these rounds with garlic butter salmon, orange chicken thighs, baked pork loin roast, or turkey burgers. You can also serve these rounds with more roasted veggies, lentils, beans, or drizzle your favorite sauces over them. Yummy!

Ingredients

  • 1 head of cabbage
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • Ground pepper
  • Lemon for serving, optional

Instructions

Prep:

  • Preheat the oven to 450F with the top rack in the middle of the oven. Line a baking sheet with parchment or foil.
  • Slice the cabbage into steaks by laying it on its side and trimming the stump. Then, slice the cabbage into thick, 1-inch steaks.
  • Place the rounds on the lined baking sheet. Drizzle with olive oil and season with garlic, salt, and pepper. I sometimes like to sprinkle some chili flakes for heat.

Roast:

  • Roast the cabbage in the preheated oven for a total of 40 to 45 minutes. Flipping is not necessary.

Serve:

  • Serve the roasted cabbage hot, and squeeze a little lemon over the top.
