Potatoes and Green Beans

These roasted potatoes and green beans cook together on one sheet pan for a simple and delicious side dish.

This easy combo of crispy baby potatoes and tender green beans roasts in stages, but finishes perfectly together.

Sheet Pan Potatoes and Green Beans

Roasting vegetables is one of the easiest ways to cook a great-tasting side dish, and these potatoes and green beans are a staple in my house. The baby potatoes go in first, then I toss on the green beans, so everything finishes together at the same time. 

On busy nights, I often cook roasted chicken pieces on the top rack while these are roasting on the bottom; since they both cook at 400°F, it's a time-saving win. One oven, two dishes, and dinner's done.

All You Need

This recipe turns out super flavorful by tossing baby potatoes and green beans with olive oil and simple seasonings: paprika, oregano, garlic powder, salt, and pepper.

How to Roast Potatoes and Green Beans 

First thing you need to do is preheat the oven. Then, you’ll season the potatoes in a bowl and bake them in a lined baking sheet. While they cook, season the green beans in the same bowl. After baking the potatoes for 15 minutes, add the green beans to the baking sheet and keep baking until they are done.

Know When They’re Done

You’ll know this side is done when the potatoes are cooked through and fork-tender, about 35-40 minutes total after you place them in the oven.

Easy Meals to Serve With This Side

Quick proteins you can serve with this side dish are these flavorful pesto chicken thighs, baked salmon, or these kid-favorite spinach turkey burgers. It’s also a great side for healthy soups, like this drool-worthy veggie tortilla soup.

Ingredients

  • 1 ½ lbs baby potatoes, washed & halved
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • ⅓ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • 1 teaspoon garlic powder, divided
  • 1 lb green beans, ends trimmed

Instructions

Prep:

  • Preheat the oven to 400F and line a baking sheet with parchment paper.

Season the potatoes:

  • In a large mixing bowl, combine 1 ½ tablespoons olive oil, ½ teaspoon salt, pepper, paprika, oregano, and ½ teaspoon garlic powder. Then, add the potatoes to the bowl and toss to coat them well with the seasoning.

Bake the potatoes:

  • Transfer the potatoes to the baking sheet and spread them out evenly.
  • Bake them at 400 degrees Fahrenheit for 15 minutes.

Season the green beans:

  • In the same mixing bowl, combine ½ tablespoon olive oil, ½ teaspoon garlic powder, and ½ teaspoon salt. Add the green beans and toss to coat them with the seasoning.

Bake the green beans:

  • After 15 minutes, remove the baking sheet with the potatoes from the oven and add the green beans. I usually move the potatoes to one side and place the green beans in the other.
  • Return the baking sheet to the oven and continue baking for another 20 to 25 minutes, or until the potatoes are cooked through.
