When you crave a delicious serving of pasta but don’t want all the carbs, this Parmesan Garlic Spaghetti Squash recipe makes a perfect low-carb substitute. Plus, you are adding more veggies to your meals!
This time, I’m baking the squash in the oven to get that irresistible caramelized texture you can’t get by steaming. That said, you can also meal prep it using the slow cooker; or, if you’re in a hurry, make this recipe by cooking the spaghetti squash in the microwave.
Now, back to this epic meal. Since the squash has a mild, neutral flavor, I’m adding butter, garlic, and Parmesan cheese to take it from great to mouthwatering. So simple, healthy, AND delicious!

- Spaghetti squash: halved and seeds scooped out.
- Olive oil: for cooking and for seasoning.
- Salt and pepper: for seasoning.
- Butter: adds a delicious taste.
- Garlic powder: more deliciousness!
- Grated Parmesan cheese: like regular pasta, we want it cheesy!
- Parsley: for garnish.

How to Make Garlic Parm Spaghetti Squash
Turn on the oven, prep the squash and let it bake. Then you add tasty seasonings and this Garlic Parmesan Spaghetti Squash is ready to enjoy! Let’s cook:
- Prep the oven
You start preheating the oven to 400F and greasing a baking dish. - Prep the squash
After washing and drying the squash, you cut it in halves. With a fork, you pierce the skin of the squash 6 to 7 times to ensure even cooking. - Season
Now, you drizzle olive oil onto the flesh of each squash half and season with salt and pepper. - Bake
You place each half flesh-side down into the baking dish and bake the spaghetti squash for 30 to 40 minutes. It’s done when you poke it with a fork and the flesh is tender. - Shred it
You shred the squash meat into a large serving bowl. - Serve
Top it with butter, garlic powder, Parmesan cheese, salt, and black pepper. Toss to combine, serve, and top with parsley and remaining Parmesan cheese. Enjoy!

Prevent the spaghetti squash from getting soggy by cooking it meat-side down on the baking sheet and removing it from the oven as soon as it’s cooked. When you shred it with a fork, let the steam release before adding butter and seasonings.

Ingredients

- 1-2 tablespoons olive oil
