Preheat the oven to 450F with the top rack in the middle of the oven. Line a baking sheet with parchment or foil.
Slice the cabbage into steaks by laying it on its side and trimming the stump. Then, slice the cabbage into thick, 1-inch steaks.
Place the rounds on the lined baking sheet. Drizzle with olive oil and season with garlic, salt, and pepper. I sometimes like to sprinkle some chili flakes for heat.
Roast:
Roast the cabbage in the preheated oven for a total of 40 to 45 minutes. Flipping is not necessary.
Serve:
Serve the roasted cabbage hot, and squeeze a little lemon over the top.
