When you don’t know what to serve with chicken or your favorite protein, one of these vegetable side dishes can come to the rescue! From caramelized roasted vegetables to fresh salads, these side dishes recipes add nutrition and goodness to every bite.

Ingredients

Balsamic Vinaigrette:

  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Grilled Veggies: 

  • 1 zucchini, sliced into ¼-inch thick slices
  • 1 yellow squash, sliced into ¼-inch thick slices
  • 2 red bell peppers, seeded and sliced into 2-inch thick strips
  • 1 red onion, peeled and sliced into ¼-inch thick rounds
  • 1 bunch of asparagus, ends trimmed
  • 8-ounce container hummus of choice
  • 4 pita rounds

Instructions

  1. In a medium bowl, whisk the vinegar, oil, honey, mustard, salt, and black pepper. 
  2. Place the veggies into a baking dish or baking sheet and brush both sides with the vinaigrette. Allow them to marinate for 10-15 minutes. 
  3. Meanwhile, preheat the grill to medium-high heat. 
  4. Transfer the vegetables to the grill and cook for 5 minutes on one side before flipping and grilling for another 4 minutes or until the veggies are lightly charred. 
  5. Remove from the grill and serve with hummus and pita.
