Preheat the oven to 400F. Lightly grease a baking sheet with olive oil or cooking spray.
Season:
Place the cauliflower rice onto the baking sheet, drizzle with olive oil, and season with garlic powder and salt. Toss the coat the veggies and spread them out in an even layer.
Roast:
Roast for 25 to 30 minutes, stirring halfway through, or until the cauliflower is tender.
