This sheet pan sausage and vegetables recipe turns roasted veggies into a full meal with minimal effort and cleanup!

Ingredients

medium sweet potatoes

peeled and cubed small

broccoli florets

cauliflower florets
½
red onion

sliced

tablespoon
olive oil

teaspoons
vegetable seasoning*

sausage
,
any, cut into 1-inch diagonal slices
Instructions
Prep:
Preheat the oven to 400F with the top rack in the middle position. Line a baking sheet with parchment paper.
Add the veggies to the baking sheet, drizzle the olive oil over the top, and sprinkle the seasoning. Toss to distribute the seasoning.
Add the sliced sausage to the sheet pan.
Roast:
Roast in the preheated oven for 35-40 minutes until the veggies are golden brown and tender.
Remove it from the oven and serve immediately.
Notes
Swap the vegetable seasoning for ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon paprika, ½ teaspoon oregano.
