When the fridge is full of veggies and you need dinner fast, this one-pan wonder saves the day.

Roasted Veggies and Sausage
I make roasted vegetables all year long, but this recipe takes things up a notch by adding sausage right to the sheet pan for a complete meal. There’s no need to cook a separate protein; simply toss everything in the oven and let it do the work.
I usually serve this over rice, or I throw it on top of a bowl of greens and call it a roasted vegetable salad. Easy, delicious, and endlessly flexible. What's not to love?
How to Make Sheet Pan Sausage & Veggies
The three easy steps to make this sheet pan dinner with vegetables and sausage are:
- Preheat the oven and line a baking sheet to keep the veggies from sticking.
- Season the veggies on the baking sheet with oil and seasonings. Once done, add the sliced sausage.
- Roast for 35 to 40 minutes until the veggies are golden brown and tender.

Easy Variations
You can add more veggies or swap them for others that cook at 400F in 35-40 minutes, such as carrots and radishes (in 1-inch pieces), beets (in 1-inch cubes), Brussel sprouts halved, baby potatoes halved, bell pepper (1-inch pieces), or parsnips (1-inch cubes). You can also use a different blend of herbs and spices, like Italian seasoning or Cajun seasoning, or swap the protein and make sheet pan chicken and veggies.
Sheet Pan Sausage and Vegetables

Ingredients
- 2 medium sweet potatoes, peeled and cubed small
- 2 cups broccoli florets
- 2 cups cauliflower florets
- ½ red onion, sliced
- 1 tablespoon olive oil
- 2 teaspoons vegetable seasoning*
- 16 ounces sausage, any, cut into 1-inch diagonal slices
Instructions
Prep:
- Preheat the oven to 400F with the top rack in the middle position. Line a baking sheet with parchment paper.
- Add the veggies to the baking sheet, drizzle the olive oil over the top, and sprinkle the seasoning. Toss to distribute the seasoning.
- Add the sliced sausage to the sheet pan.
Roast:
- Roast in the preheated oven for 35-40 minutes until the veggies are golden brown and tender.
- Remove it from the oven and serve immediately.
Notes
- Swap the vegetable seasoning for ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon paprika, ½ teaspoon oregano.
