This skillet spinach and ground beef recipe combines seasoned beef, plenty of spinach, salsa, olives, and melted cheese for an easy 15-minute dinner made in one pan.
For serving: shredded lettuce, guacamole, sour cream, tortilla chips
Instructions
Cook the filling:
In a large skillet over medium-high heat, warm up the oil. Add the onion and sauté for about 3 minutes until soft. Add the ground meat, diced bell peppers, and taco seasoning, and cook, breaking up the meat as it cooks, for about 5-7 minutes until it’s cooked through and the peppers have softened.
Reduce the heat to medium. Add the salsa and spinach, stir to combine, and heat through for about 2 more minutes. Sprinkle the cheese and black olives (if using) over the top and cover with the lid. Turn off the heat and keep it covered for about 3 minutes, until the cheese has melted.
Serve:
This spinach and ground beef can be served over shredded lettuce, over rice as bowls, or as is, topped with guacamole, more salsa, and sour cream with chips (my favorite!).
