In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the middle and pour in the milk, egg, butter, and vanilla extract. Break up the egg first with a fork, and then begin mixing it with the flour, working from the outside of the bowl in, until just combined and the batter is mostly smooth.
Cook the pancakes:
Heat a non-stick griddle or large pan over medium-high heat. Once hot, spray, grease, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
Immediately, pour a 2-tablespoon-sized amount of batter to make the mini pancakes for the snowman head and body. Cook the pancakes for about 2 minutes per side. Remove the pancakes from the pan onto a plate and keep them warm while you cook the rest of the batter.
Assemble the snowman:
Place three mini pancakes on a plate to create the snowman. Make the eyes, buttons, arms, and feet with blueberries. Use a strawberry for the hat and a small strawberry slice for the mouth. Sprinkle powdered sugar for the snow.
Notes
Since pancake batter naturally has a mild, neutral flavor, I recommend using aluminum-free baking powder.
