In a large skillet over medium-high heat, heat up oil. Add the minced garlic and toast for about 30 seconds.
Add in tomatoes, Italian seasoning, red pepper flakes, and salt. Stir and cook, until cherry tomatoes begin to soften, about 3 to 5 minutes, stirring often.
Reduce heat to medium-low; mix in spiralized zucchini, toss to combine, and cover. Simmer covered for 3 minutes, or until desired doneness of zucchini.
