rotisserie chicken

or 1 avocado

Instructions
Cook the rice:
Prepare the rice according to package directions.
Shred the chicken:
With a fork, shred the roasted chicken and place in a serving bowl. Keep warm and set aside.
Warm up the black beans:
Place the black beans in a medium, microwave-safe bowl. Microwave for 1 minute or until heated through and season with salt, if desired.
Assemble:
Place the remaining toppings into individual bowls.
Grab a bowl and add a scoop of rice. Top with the shredded chicken, black beans, and your choice of toppings.
