Rotisserie Chicken Burrito Bowls

These burrito bowls with rotisserie chicken are easy to prepare and your entire family will love to build their own!

Grab a rotisserie chicken and solve dinner fast and effortlessly with these quick burrito bowls.

Burrito Bowls with Rotisserie Chicken

Rotisserie chicken bowls are one of my favorite ways to build epic family dinners that I can get on the table fast. These burrito bowls are made with shredded rotisserie chicken and other simple ingredients that can be prepped ahead, stored in the fridge, then reheated and assembled quickly on the night you planned to make them.

Ingredients

The base of these bowls is rice, but you can use cauliflower rice or shredded lettuce for a low-carb version. Then, you’ll need shredded rotisserie chicken, canned black beans (or your favorite beans), shredded Cheddar cheese, jarred salsa or Pico de Gallo, and avocado (or guacamole).

How to Make Rotisserie Chicken Burrito Bowls

Here’s how to assemble these chicken burrito bowls:

  1. Cook the rice on the stovetop or in a rice cooker. 
  2. Shred the chicken with a fork and place it in a serving bowl. 
  3. Warm up the black beans in the microwave for 1 minute or until heated through. Season with salt, if desired. Place the remaining toppings in individual bowls and assemble.

These burrito bowls make a great self-serve dinner to load up with our favorite toppings. Some additional items to try in your bowl are corn, black olives, Queso Fresco, Cotija, chopped cilantro, a squeeze of lime juice, sliced red peppers, shredded lettuce, sour cream, and tomatillo salsa.

Ingredients

  • 1 cup rice
  • 1 rotisserie chicken, shredded
  • 15- ounce can black beans, rinsed and drained
  • ½ cup shredded Cheddar cheese
  • 1 cup Salsa, jarred or fresh Pico de Gallo
  • ½ cup Easy Guacamole or 1 avocado, diced
  • Sour cream, optional

Instructions

Cook the rice:

  • Prepare the rice according to package directions. 

Shred the chicken:

  • With a fork, shred the roasted chicken and place in a serving bowl. Keep warm and set aside. 

Warm up the black beans:

  • Place the black beans in a medium, microwave-safe bowl. Microwave for 1 minute or until heated through and season with salt, if desired. 

Assemble:

  • Place the remaining toppings into individual bowls. 
  • Grab a bowl and add a scoop of rice. Top with the shredded chicken, black beans, and your choice of toppings.
