Mediterranean-Style Rotisserie Chicken Bowls
After my family devoured my rotisserie chicken fajita bowls, and my rotisserie chicken and fried rice, I had to try a different flavor profile, and that's how I ended up serving this easy recipe: Greek-inspired rotisserie chicken bowls. Result? A new family favorite!
All you have to do is cook rice on the stove or in the rice cooker and assemble the bowls. How not to be a little obsessed with rotisserie chicken dinners? Totally a fan!
Ingredients
I make these bowls with rice; you can use brown rice, farro, or pasta. For a low-carb twist, swap it for shredded lettuce, cabbage, or cauliflower rice. Then you’ll need rotisserie chicken, tomatoes, cucumber, Kalamata olives (or your favorites), and red onion. More classic Greek flavors come from tzatziki sauce (homemade or store-bought) and crumbled feta cheese. The final touch? Lemon wedges for serving!
How to Make Greek Bowls with Rotisserie Chicken
While you cook the rice or your grain of choice, shred the rotisserie chicken and slice any veggies as needed. You can even use leftover rice and save even more time. Then, make a bed of rice and top it with chicken, veggies, tzatziki sauce, and cheese. Add some lemon wedges on the side, and enjoy!

Rotisserie Chicken Greek Bowls

Ingredients
For the rice:
- 1 cup white rice
- 2 cups water
- ½ teaspoon salt, optional
For the bowls:
- 4 cups rotisserie chicken meat, diced
- 1 pint cherry tomatoes, halved
- 1 seedless cucumber, coarsely chopped
- ½ cup kalamata olives
- ½ red onion, sliced
- Tzatziki sauce
- ¼ cup crumbled feta cheese
- Lemon wedges, for serving
Instructions
Prep:
- Cook the rice according to the package directions.
- While the rice cooks, chop or shred rotisserie chicken and slice the veggies.
Assemble:
- In a bowl, make a base of rice. Top with rotisserie chicken, tomatoes, cucumber slices, olives, red onion, tzatziki sauce, and feta cheese. Serve with lemon wedges.
