My husband and I love chili. He loves to have a big bowl of hearty meaty goodness during football season while I prefer a meaty and bean-free version. This is a great compromise for both of us and a recipe loved by our guests as well.

Chili is such a versatile meal that is great for dinner or lunch. It also pleases the whole family. If you are not following a strict Paleo diet, you can top it with cheese and sour cream.

How to Make Paleo Chili
This epic, healthy chili recipe could not be easier to make! It comes together in a single skillet and is packed full of delicious flavors your family will love. Watch this quick recipe video to see it come together.
No Bean Chili
One of the reasons I love this recipe is because I get my chili fix without the need for beans. That’s right, it’s full of flavor and no beans. I tweaked the seasonings for over two years until I came up with, what I think is, the perfect balance of smokiness and heat.
I love cooking this chili in a large cast-iron skillet (as shown) or a Dutch oven. I really think the cast iron’s ability to hold the heat helps the seasonings penetrate the meat and veggies.
Do you know what else is great about this recipe? You can brown your meat and throw it all inside a slow cooker, for 4 hours on high or 6-8 on low and it’s a zero fuss way to eat chili. You are welcome.

Although I eliminated the beans in this recipe, all the hearty vegetables add the filling volume our hungry bellies want and need. Plus, it’s super colorful and looks gorgeous when served, not to mention delicious.
Best Veggies for Paleo Chili
Today, I’m using carrots and zucchini as the filler veggies in this chili. Keeping the same amount of veggies that the recipe indicates, meaning the same volume, you can also use:
- cubed sweet potatoes
- cubed butternut squash
- chopped cauliflower
- cubed turnips
- cubed beets
- a handful or two of spinach
- chopped broccoli
This chili is very thick. If you want to make it more soup-like, add 2 cups of stock to thin it out. It’s the perfect topping for baked potatoes or sweet potatoes. My kids don’t eat it as is so I used the mini-chopper to finely chop all the veggie chunks and topped their pasta with it for what they call: chili-pasta. Win-win!

You know why else I love this chili? Because I can make this recipe ahead of time and after a long day of work I can have a quick hearty meal. You can read many of the comments below, they all agree that this chili tastes better a few days later! Try it once and make sure you double the recipe and freeze extras. I’ll walk you through everything you need to know about freezing chili here.

Paleo Chili Ingredient Substitution Ideas:
Whether you don’t have some of the veggies around, have picky eaters who don’t eat carrots or zucchini, or you simply want to make the most out of this recipe and add variety, the following are great substitutions and add-ins to this recipe.
- Some of my readers have found that replacing the carrots with sweet potatoes is a great option if you have kids who don’t eat carrots or want to up the carbohydrate count of this recipe.
- Add 8 ounces of mushrooms to the recipe when sautéing the veggies. They’ll add a delicious earthy flavor to the recipe.
- Substitute the zucchini with butternut squash, either fresh or frozen.
- Substitute the ground beef with ground turkey or chicken. However, the latter has very little fat so the chili might be a bit dryer in texture.
- Replacing the ground beef with chicken is also a popular choice, however, the recipe will vary a little so I went ahead and created the Paleo Chicken Chili Recipe in this post.
- Add 2 to 4 additional cups of broth or stock to this recipe to make it more soup-like. The chili texture is thick.
- Many of my readers have loved this chili recipe so much that they’ve replaced the ground beef with 2 15-ounce cans of black beans to make it a vegetarian meal.
- In addition, some have used cubed tofu in this recipe and kept it vegetarian with no beans.
- At special request from readers, I’ve tweaked my chili to only 6 grams of carbs (without sacrificing flavor) in this keto chili recipe.
- Add ½ to 1 whole finely chopped jalapeño when sautéing the veggies for added heat. This chili is rich and smoky not very spicy.

How to Freeze Chili Leftovers
This recipe freezes very well. I like to freeze leftovers in 1 cup to 1 ½ cup servings for quick lunches or single-serve dinners.
Of course, you can fill leftovers in a gallon zip bag and freeze for another dinner.

How to make Paleo Chili in the Slow cooker

How to keep paleo chili warm for a party:
Make this paleo chili recipe a day or two ahead before a party and store in the refrigerator. The day of the party, simply warm it up and keep it “warm” in your slow cooker so your guests can serve themselves or in a large pot on your stove on the lowest setting.
Most of us think it tastes better the next day!
How to Cook Paleo Chili in the Instant Pot:
Brown your meat in the Instant Pot and then add all remaining ingredients. Cook for 10 minutes and it’s ready.
The only downside of cooking this recipe in the Instant Pot is that the zucchini will be cooked a lot and very soft. For this method, I recommend substituting the zucchini with diced sweet potatoes.
Paleo Chili Toppings
You can’t go wrong with a big bowl of this paleo chili recipe. However, just like any of my taco recipes, the more toppings the better! Here are some of my recommended toppings for this recipe:
- Chopped cooked crispy bacon
- Sour cream, if you can have it
- Grated cheese, if you can have it
- Served with organic corn chips, if you can have them
- Served over cauliflower rice, to stretch this meal and eat extra veggies
- Over spaghetti squash
- As a topping for baked sweet potatoes
- With my Paleo Drop Biscuits inside my Grain Free Cookbook
- With Paleo “Corn Bread” in my Family KickStart Program

Paleo Chili | the Original All Meat & Veggie Chili
Ingredients
- 1 ½ pounds ground beef
- 2 cloves garlic, chopped
- 2 tablespoons oil
- 1 ½ cups onion, diced, about 1 large onion
- ½ cup celery, chopped, about 1 stalk
- 1 ½ cups carrots, peeled and diced, about 4 medium carrots
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- ¼ teaspoon cayenne pepper, optional
- 4 cups zucchinis, diced, about 2-3 medium zucchinis
- 15 ounce can tomato sauce
- 15 ounce can diced tomatoes
Instructions
- In your seasoned skillet or 5-6 quart large cast iron pot, brown beef and garlic. Cook over medium heat until beef is thoroughly cooked and browned. Drain off excess fat, set aside.
- Add oil, onions, celery, carrots, and seasonings to the skillet and cook until translucent over medium-high heat, about 5-7 minutes. Once onions are golden and veggies are midway cooked, add zucchini and cook for 2 minutes, making sure you stir everything well.
- Add cooked beef, tomato puree/sauce, and tomatoes into the pot and stir well. Bring everything to a boil, stirring frequently, reduce heat and simmer for 20 minutes.
- Check on the amazing mixture every so often and stir. Serve immediately.

I’ve been craving chili on my low carb diet & this was so satisfying! It was thick & spicy enough without cayenne pepper, so I omitted that, sauteed 8 oz chopped white mushrooms with the other veggies & added a 15 oz can low sodium beef broth. This is my all-time favorite chili recipe but more importantly – it is my kids’ favorite, as well! If I were to put this many veggies in front of them on a plate, there would be endless complaints but when I present them all in a bowl of this chili, the gobble it right up! You sure can! brown your meat and onions in the sauté mode. Then add the spices and everything else and cook on HIGH pressure for about 5 minutes. I usually do a quick release myself but a natural release is fine too.

Hi Letha, this recipe has about 9 grams of net carbs. I am currently working on a recipe for keto chili but for now, I would swap the carrots for 2 cups of chopped cauliflower, reduce the onions to 1/2 cup, and swap the tomato sauce for 2 tablespoons tomato paste and 1 cup of beef broth.

I boil dry chili’s in chicken broth instead of using chili powder. Then I purée it in a blender. This will obviously up your liquid factor. I also add a stick of chorizo to my meat. If I use beans I use no salt beans because I like putting in a cube of beef bouillon.

I usually add zucchini 5 minutes before it’s ready. Same for soup. Keep the pot covered and the heat will cook the zucchini. That way zucchini stays crunchy.

absolutely! That’s what I do as well. I use a food processor to finely chop all the veggies. Then I cook it with meat. The size and texture is smaller than the mean and my kids don’t notice they are there.

A question, since I count my carbs every day: How much is a serving size in your nutrition facts? I have made this recipe a few times, and my “serving size” is two cups.
Also, my organic, grass-fed ground beef comes in 1# pkgs, so I use less meat than in the recipe.

I’ve been making this for a couple years now; at least I think it’s been that long. My boyfriend said it’s his favorite chili and my daughter loves it as well.
I made very small adjustments.. I cut the chili powder in half, used 2 carrots instead of 4 and added 1-2 yellow squash.
I do think the prep time is understated if the veggies are to be diced as opposed to just chopped. It takes me a good 30 minutes to dice everything up, but it’s still so worth it!
I made a double batch about a month ago and froze a small portion for the first time. I just ate it today and it still taste just as good as when I first made it.

I’m laughing at myself for epically failing on this one and yet it still tastes so good.
1) I did 1.5x the veg because I had 1kg of beef…. turns out it was only 600g. It was VERY veggie heavy. ♀️
2) We are on day 4 of Whole30, and it turns out the tomato sauce I have is a 4 cheese one. ♀️♀️
Ended up subbing for more tomatoes, some tomato paste, and a bit of beef broth.
Between Whole30 & being 22 weeks pregnant (with baby #4!) I have approximately 5% of the brain I had preconception. It’s rough over here. With that said, this is an incredibly forgiving recipe. I topped with some dill cashew cream and happily ate my little heart out. I didn’t even ask the kids or the husband what they thought because by the time we were eating I could not have cared less about their opinions. But they did eat it, and no one complained, and that’s a 5 star win in this house!

Not very spicy at all. It’s more smoky than spicy. Omit the cayenne -even though it’s just a pinch-. I also top my kid’s bowls with cheese and sour cream it cuts down on the seasoning.

It is a very odd thing about chili recipes and pictures of them — the prettier the picture, the poorer the recipe.
A great bowl of chili makes an ugly photo because it doesn’t have a bunch of recognizable or colorful stuff floating around in it like red & yellow bell peppers, nasty kidney beans or tasteless black ones, carrots & zucchini, or even chunky tomatoes. A real bowl of chili is just a big glop of flavor.

This is a great recipe! I have a damaged esophagus so I have what is called Silent Acid REflux (no heartburn) and stay away from citric acid, this morning includes tomatoes. But I like love chili; so I used 3 boxes (organic) of condensed cream of mushroom soup. It was great, the only difference I did was use the same amount of cumin as chili powder. I like the idea of using sweet potatoe instead of carrots-will try that next time. I used ground buffalo and some grass-fed beef strips.

I never had chili with veggies before so was reluctant but loved this and will double or triple the next one to freeze. I made a few changes because we like a chili that’s less thick and used 1 lb. ground beef, can of fire roasted tomatoes, an extra can of tomato sauce and cut down on the spicy seasoning since my daughter and I are super sensitive to spicy hot foods. It was delicious with the zucchini and carrots and I love how this is an easily modified and still delicious recipe. This will be on our dinner rotation.

Just made this tonight and it was FANTASTIC!
I made a few modifications, since my husband doesn’t like celery or zucchini: used rainbow baby carrots chopped (mainly for extra color), added mini red/orange/yellow bell peppers, added chicken stock (made earlier by boiling chicken wings in seasoned water with onion as part of making buffalo wings).
I love that it didn’t require a bunch of specialty ingredients.

Five stars and two thumbs up! I made this a couple weeks ago with ground turkey breast and we both loved it (yes, even the picky hubster). I cut way back on the chili powder because the brand I had was quite hot, and I substituted a green bell pepper for part of the zucchini. I’m making another batch tonight to reheat tomorrow night, when I have to rush home from work, eat, and run out again. This is a fantastic recipe, and I thank you for sharing it.

Super recipe that adaptable to what you have on hand. I browned 1-1/3 pound ground pork, 1-1/2 pound ground beef, added garlic, then set it aside. Added oil to sauté the onion a bit then tossed in some chopped zucchini, yellow squash, carrots, summer squash, celery, the leftover half of a butternut squash I found in the fridge, half a chopped green bell pepper (I love bell pepper in my chili!), and a couple of diced jalapeño peppers, seeds and all or add a little kick.. I let all that sweat in the pan for a couple of minutes then stirred in the seasonings (doubled to account for my extra volume) and finally dumped everything into my big crockpot. Deglazed the pan with some red wine and added that, too. 15 oz tomato sauce, 30 oz diced tomatoes puréed in the blender, 30 oz diced tomatoes, and a cup of beef stock topped off the crockpot which was set to the 10 HR (very low) setting.. I think the magic is in the seasoning proportions,, which are perfectly balanced for a great chili taste experience. I might never have added all the great verges to chili without your fantastic recipe as a a shining guidepost.

This is a delicious and very flexible recipe. I always make it with a few tweaks depending on what I happen to have in the house. I find one pound of ground beef is enough in this recipe; i have never used the carrots; never added the celery, but do substitute celery salt for the salt; i have on occasion added green pepper; I typically use three cans of diced tomatoes instead of the one can and can of purée; instead of the 2 tbsp chili powder i use ground ancho chilis. I usually serve this chili on sweet potato chips and top my portions with avocado. Love it!

I have made this before on the stove top, and my non-paleo boyfriend absolutely loves it! Said I need to make it regularly. I did use a little less of the spicy ingredients since we aren’t big on spicy. 🙂

Wow! Laura I just made this last night. I am currently on the 17 Day Diet, cycle 1–so I could not have the beef. I did substitute lean ground turkey and you could not tell any difference. I did not add any zucchini (texture issue for me) and substituted yellow bell pepper. It was killer flavor in my mouth. My husband makes Texas Style Chili and he said your recipe may be better than his.

Absolutely awesome recipe!! I never leave feedback, but I feel like I have to for this. I usually make my chili with beer and top with cheese and sour cream. This recipe doesn’t need any of that! Great flavor, I wouldn’t change a thing! I can’t believe the depth of flavor that is attained in such a small amount of cooking time. Ready in 30 minutes? Perfect! This was delicious, and also very visually appealing with all the colors from the veggies! I originally made it for my son who is doing the Paleo diet, but I loved it so much that I plan on making it regularly. This also fits well into the Weight Watchers Smart Points plan, as the only ingredients that add points are the meat and oil. I used 93% lean beef and also added 2 cups of yellow diced bell peppers. I did not find it to be too spicy. I even added extra cumin and oregano. I also used 2 cans of diced fire roasted tomatoes, as it is indeed very thick as described. Thanks for a great recipe!

Just a quick comment – I found this to be WAY too spicy! I have a high spice tolerance but I recommend not using 2 tablespoons of chili power – I recommend one. Other than that, good, but the spice is over powering. 🙁

OMG… I love this recipe. It is my favorite. I have tried it with shredded chicken, but like ground beef best. One thing I do is I transfer it to the crock pot and let it simmer 2-3 hours on low instead of simmering in the skillet. This makes the veggies so soft and they just absorb the flavor. Also, to me… it tastes better 1-2 days later after the spices have settled and blended.

This chili is delicious! My husband and I have only been Paleo for about four weeks and we tried making this on the second. We were getting desperate for some flavor, and this chili is insanely good. It’s thick and there’s plenty of beef and veggies. The best part is how easy it was to make. The prep is the longest part, but we followed the recipe all the way up to the skillet. Instead, we tossed it all into a crockpot and it came out perfect!

The ingredient list says to use Tomato sauce, but in the directions it say’s puree. I just need to make sure, because I saw that some said it was too thick, so thinking they used puree instead of sauce.

Enough kick to make my husband happy, and mixed up enough to make my son think it was a chip & dip snack for dinner (which he chowed down a whole bowl). This is very delicious, however, it came out VERY thick for me. Past the point of chili and into the realm of super awesome thick pasta sauce. I added corn to help give it more of a chili flavor instead of a sauce missing its pasta. Should I just add water or a beef broth to thin it out next time? Hi Mary, the carrots will definitely take the longest to cook which is why cutting them quite small helps. I’m glad you enjoyed it.

I used baby carrots and cut them in half, then sliced them into chunks. Put them in a microwave steamer just to soften them up then added them. It made it all come out done at the same time.
I cut back the zucchini so I could add a medley of halved & sliced mushrooms.
My husband isn’t strictly paleo “yet” so I did add a can of beans, and instead of using the oil, cooked a couple of slices of bacon in the pan first, then drained them while I cooked the meat. Then added the veggies, sauteed, and added the rest and let it cook slow. The guys loved it. With all those veggies, I was a happy camper.

I’m loving the look of this! I too just recently started Paleo (with a kick start from a 21 day sugar detox) and was SO craving chili is weekend…. Now that hubby wants to jump on board this will be perfect – and the kids usually love chill so hopefully they won’t notice the missing beans *crossing fingers* 🙂

thanks for sharing! I too have been dealing with a string to stomach issues and my doctor prescribed doing a modified Whole30 to see if we can get me back on track (I’m also going to be avoiding fruit, boo). It’s nice to see recipes that will work for the whole family. I truly believe in not being a short order cook which is probably my biggest fear of doing something like this. Just made this. It is awesome! I actually added 1 tbls of ground cumin, and replaced the carrots with sweet potatoes!! It is great! Awesome quick and easy recipe sure to be one of my staples!!! Thanks!
